1. Mound flour in center of work surface and make a well in the middle. Crack eggs into well. 2. Beat eggs then begin to work the flour into the rest of the flour. 3. Once all flour has been incorporated, start working dough with your hands to form a rounded mass for kneading. Knead dough for about 10 minutes, or until smooth and elastic. 4. Cover dough with a bowl and allow to rest 1 1/2 hrs. 5. Lightly flour a clean work surface and vigorously roll the dough into a very thin circle; apply even pressure. As the dough streches, roll constantly. Roll for several minutes until dough is as thin as possible. If it shrinks back as you roll, cover with a towel and let rest 10 minutes before you resume rolling. 6. To cut into sheets, lightly fold the sheets one at a time into thirds. Cut crosswise with a sharp knife to desired thickness.
