French Lentil Salad

   In a medium pot over medium-high heat, bring lentils, smashed garlic, and enough water to cover by 1-1/2 inches to a boil.

   Reduce heat to medium-low and simmer for 10 minutes.

   Add 1 teaspoon salt and simmer for 10 minutes more.

   Turn off heat and let lentils rest in cooking liquid for 15 minutes.

   Drain lentils and discard garlic.

   Transfer lentils to a medium bowl and let cool slightly.

   Toss lentils with remaining ingredients and season with salt and pepper.

   Serve warm or at room temperature.
