Wash the potatoes well and remove the eyes.

Cut into 1.5 cm matchsticks.

Soak in water to remove the starchiness.

Discard the water twice.

Get rid of the water, place the potatoes in flat sieve, and leave for 30 minutes to dry.

Slowly melt 100 g of butter in a frying pan on low heat.

Place the potatoes into the clear butter and fry for 10 minutes on low heat while occasionally turning them over.

When the potatoes have cooked through, raise the heat and fry until the surfaces become browned and crispy.

Place into a paper towel-lined bowl.

Toss out the butter from the frying pan and add the butter from Step 5.

Put in a little bit of dried parsley and mix in well.

Return the potatoes to the pan and coat with the butter.
