12 lb smoked gruyere cheese
12 lb emmenthaler cheese
1 cup dry white wine
1 ounce dried mushroom
1 ½ cups water
1 tablespoon dried garlic
½ teaspoon paprika
2 tablespoons flour
1 dash cracked black pepper
1 teaspoon lemon thyme
