Start by putting the egg yolks in a big bowl, then add the sugar and use a mixer or whisk to work it into a creamy texture. Add all of the other ingredients except the egg whites and the dusting sugar (you will only need the sugar for dusting the cake at the end) and mix well.

In a separate bowl whip up your egg whites to stiff peaks and then add them into the other ingredients, folding them in gently.

Leave everything to rest at room temperature for about 30 minutes. Heat oven to 200 C.

Pour the batter into a baking tray (I used a rectangular ceramic one, about 40 x 25 cm), put it into the oven and bake for 30 minutes at 200 C. After this time, take it out of the oven and set aside to cool. Then use the dusting sugar to coat.
