Cut fish into big pieces. Wash and rub with salt and ground turmeric. Set aside for 30 minutes. Heat oil in a pan over medium heat and brown fish pieces. Remove to a dish. The oil can be strained for the next stage.

In a clean saucepan, reheat strained oil on medium heat and fry cumin, cinnamon, and cardamom for 1/2 minute, then add onion slices and bay leaves and stir until onion slices are limp. Add sugar, ground ingredients, garam masala, ginger juice, yogurt, 2 ounces cold water and salt to taste. Stir-fry until liquid dried up, and add fried fish and 3/4 pints cold water for gravy.

When fish is cooked and gravy thickened, add tomato slices and remove from heat. Serve with rice.
