Cook the bacon over medium heat in a large frying pan until crisp.

Remove bacon from the skillet to a paper towel lined plate.

Set aside.

Drain the bacon grease from the pan and set aside to use to cook the sandwiches.

Spread the softened butter on one side of each piece of bread.

Spread about 1/2 tablespoon of the fig jam or spread onto the un-buttered side of each piece of bread.

You dont need a lot of the fig jam as its pretty sweet.

A relatively thin layer should offer plenty of flavor.

Return the large frying pan to the stove and turn to medium heat.

Add some of the brie or a similar soft cheese to the fig jam covered side of 2 of the slices of bread.

Top that with bacon and another layer of cheese.

Top with the other 2 slices of bread so that the buttered side is facing out.

Put both sandwiches in the hot pan.

Let then sit undisturbed for 2 or 3 minutes or until the bread is a crisp golden brown.

Flip the sandwiches and cook again until that side of the bread is a crisp golden brown.

Remove from pan and enjoy!

A multi-grain or other dark crusty bread works really well with this.

Also, depending upon the size of your bread slices, you may require more or less butter, fig spread/jam, cheese and bacon.
