1 cup boiling water
1 pound mixed wild mushrooms, such as shiitake, portobello, and cremini

1/2 pound white mushrooms, sliced
1 tablespoon chopped fresh rosemary, or 1 teaspoon dried, crumbled
1 onion, chopped
4 cloves garlic, minced
1 cup red wine
1 3/4 teaspoons salt
1/8 teaspoon fresh-ground black pepper
1 pound fettuccine
1 tablespoon butter
3/4 cup grated Parmesan cheese, plus more for serving
3 tablespoons chopped flat-leaf parsley
