Fennel Citrus Salad

   dice all citrus.

   thinly slice fennel (as fine as possible, i use a mandoline).

3. 3

   seperate witlof leaves.

4. 4

   place citrus fennel and creme fraiche in a mixing bowl and toss together.

5. 5

   place seperated witlof on plate.

6. 6

   set fennel/citrus mix on top of witlof, reserve juice from the mixing bowl.

7. 7

   place fish on salad.

8. 8

   dress fish with remaining juice.
