Preheat oven to 375u00b0F and prepare a cookie sheet (I always use baking paper instead of buttering it).

In a large mixing bowl, beat the shortening and the butter.

Add the sugar, brown sugar and the baking soda. Beat until combined.

Beat in the eggs and vanilla until combined.

Beat in as much flour as you can with the mixer. Stir in the remaining flour and the chocolate chips and, if you're using them, the walnuts.

Now you can either use a teaspoon to drop the dough on a cookie sheet or put the dough in the fridge for a few minutes and then roll it into even balls and put them onto the cookie sheet. Either way, leave enough space between them so the cookies won't stick together as one giant cookie. If you don't make them too big, you can get between 90 and 100 cookies out of this recipe.

Bake for 8-10 minutes or until the edges are light brown. Then hide them from everyone else so you can eat them all.
