Family Favorite Roast Chicken

   Preheat oven to 350F.

   Rinse chicken and pat dry with paper towel.

   Using the tip of sharp knife, separate the skin from the meat across the chicken breast and over the tops of the legs.

   Sprinkle inside and out with salt and pepper.

   Place in a 13x9-inch baking dish.

   Grate the lemon.

   Combine grated peel, cream cheese and Italian seasoning.

   With a small spoon or with your hand, carefully stuff the cream cheese mixture under the chicken skin.

   Push the mixture carefully towards the legs without tearing the skin.

    Cut the lemon in half; squeeze both halves into a small bowl.

    Stir in the dressing with wire whisk.

    Drizzle over chicken.

    Place the squeezed lemon halves inside the chicken cavity.

    Insert an oven-proof meat thermometer into thickest part of one of the chicken's thighs.

    Bake 1-1/2 hours or until chicken is cooked through (reaches an internal temperature of 180F), basting occasionally.
