Extra Crispy Fried Chicken

   Egg wash; whisk 2 eggs in water.

   In seperate bowl, add cornstarch to flour and season with salt, pepper, paprika, and soul seasoning.

   Mix well.

   Dip chicken in flour mix, enough to coat really good, then dip in egg wash (just dip in and then back out), then back in flour mix.

   Then into deep fryer.

   Don't put too much chicken in fryer at once.

   Chicken is done when it starts floating, but continue to cook for about 5 min after it floats to top to make crispy and golden brown on outside and juicy on the inside.

   I cook it for about 20min.
