Preheat oven to 350u00b0F.

Using a fork, pierce potatoes in around 6 places. Place directly on oven rack and bake for 50-60 mins, or until tender when a skewer is inserted into the center.

Meanwhile, heat oil in large frying pan over medium heat. Cook sausages for 4-5 mins, turning, until browned. Remove sausages from pan and slice. Add onion, carrot and celery. Saute for 3-4 mins, until tender. Add flour and curry powder. Cook, stirring, for 1 min. Gradually stir in milk until smooth. Cook, stirring, until sauce boils and thickens. Return sausages to pan. Reduce heat to low and simmer for 3-5 mins. Add cider vinegar and season to taste.

Cut a slit into each potato then stuff with sausage mixture. Serve with yogurt and cilantro.
