Meanwhile: Fry Canadian bacon over medium heat until heated through and browned.

Poach your eggs: Just get a small glass bowl; spray with a little no-stick cooking spray. Put about one teaspoon of water into the bowl. Put your egg in and pierce the yolk with a fork. And just microwave for about 40 to 50 seconds. Watch the eggs very closely. About half way into cooking I will flip the egg - just take a spoon and go around the edges and flip the egg over. Microwave just a little longer until your liking.

Assemble your muffins: put two slices of Canadian bacon on each muffin, add poached egg, and top with cheese.
