Press the tofu for 30 minutes to 1 hour by putting it between two plates and placing a heavy book on top (like a dictionary).

Mix the marinade ingredients together in a large shallow bowl. Cut the tofu into small 1-inch chunks. Thoroughly toss the tofu cubes with the marinade and let marinate in the fridge for at least 45 minutes. It can marinate for up to 24 hours. Preheat the oven to 425.

Bake the tofu on 425 degrees for about 40 minutes - turning once or twice - until the tofu is golden brown.

While the tofu bakes, heat the oil on medium heat, add rice and heat until the oil coats the rice and it becomes very fragrant (about 5 minutes).

Add the water and bring to a boil. Turn to medium low and simmer 50 minutes with an airtight lid (do not ever peek at the rice). When 50 minutes is up, take the rice off the burner, but let sit another 10 minutes without opening the lid. Mix the rice with the baked tofu. Then add the rest of the ingredients. Leaving the veggies raw when adding them to the rice and tofu adds a little bit of a crunch - and keeps more nutrients in tact!

Mix all ingredients thoroughly - heat over medium heat until heated through - serve hot.
