Preheat your oven to 350 degrees. Grease your loaf pan with shortening or cooking spray.

Sift the flour, baking soda, cream of tartar, and salt together 3 times.

In a bowl, rub the shortening to a creamy consistency with the back of a wooden spoon. Stir the sugar a few tablespoons at a time into the shortening and continue stirring after each addition until light and fluffy.

Add eggs and beat well. Add flour mixture, alternately with banana, a small amount at a time. Beat after each addition until smooth. If using nuts add them to the batter now.

Pour into a loaf pan and bake at 350 degrees for 1 hour. It's done when you test it with a wooden toothpick and it comes out clean. Just poke the banana bread with the toothpick. Go ahead, it won't bite.

Cool on cooling rack for 10 minutes. You can slice it as thick or thin as you like. Enjoy!
