For the egg, turkey and tuna sandwich, hard boil the eggs. Place eggs in a saucepan and cover with water; bring to a boil over medium heat. Once the water reaches a boil, remove from the heat and let the eggs sit in the hot water for 12 minutes then drain and run under cold water. Peel and slice the eggs. Place the tuna in a bowl with the onion, capers, 2 tbsp of the mayonnaise and the mustard. Mix well. Using the white bread, make two sandwiches with the iceberg lettuce, smoked turkey breast slices, the hard boiled egg and the tuna mixture. Slice diagonally and serve.

For the cheese salad sandwich, spread the wholewheat bread slices with the remaining mayonnaise. Fill with the tomato, cucumber, cheese, arugula and cottage cheese. Slice diagonally and serve.
