Preheat oven to 375 degrees F. Lightly butter 6 standard muffin cups. With a rolling pin or your hands, flatten bread slices slightly. Then press bread into each muffin cup, overlapping slightly and making sure bread comes up to the edge of cups. Use extra bread to patch any gaps. Brush bread with butter.

Cook sausage if they aren't pre-cooked (it will also cook in the oven). Cook over medium heat until almost brown on both sides. I prefer to use pre-cooked sausage patties for ease. Lay a piece of sausage in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Check to make sure that the yolk is still a little wiggly. Run a small knife around cups to loosen toasts. Serve immediately with coffee.
