Heat up a pan, big enough to hold the chuck roast, to medium/high.

Season each side of the chuck roast with salt and pepper.

Sear each side of the chuck roast for 2 minutes on each side.

Wash and peel the potatoes.

Cut them into large cubes and put them in the bottom of your crock pot.

Wash the baby carrots.

Place them on top of the potatoes.

Cut the onions into several large peices and place on top of the baby carrots.

Place the chuck roast on top of the potatoes, baby carrots and onions.

Now, mix together the French onion soup mix with the water.

Pour all over the chuck roast and down in the sides of the crock pot.

Put the lid on the crock pot and cook on low for 8-9 hours or on high for 4-5 hours.
