Preheat oven to 400 degrees F.

Roll out puff pastry onto a lightly floured surface, then place onto a baking sheet lined with parchment paper.

Heat olive oil on a stove top pan over medium high heat.

Add onions and brown sugar and cook for about 8-12 minutes, stirring occassionally until onions are soft and caramelized.

While cooking onions, score the puff pastry by running a knife about a 1/2 inch to an inch from the outer edge to create a border.

Then prick the center of the puff pastry with a fork multiple times.

Dot pastry with goat cheese, then spread on the caramelized onions.

Now you have an option.

You can choose to cook your prosciutto (which I did) or you can wait and put it on after the puff pastry cooks.

This is entirely up to you, I like it both ways.

If you want to cook the prosciutto, place the slices on top of the onions; and otherwise do it after you bake the tart.

Bake for 15 to 20 minutes, until edges of the crust turn golden.
