Easy Pork Roast

   The Pork:

   The day before. Mix up you brine by combining salt, sugar and water in a large stock pot over medium low heat until salt and sugar are dissolved. Add a bay leaf and thyme for an extra bit of flavor. When brine has cooled, put you pork shoulder into the pot and cover. Let it sit at room temperature for at least 4 hours or preferably over night. After that time, rinse, pat dry and put it on a roasting pan in the oven at 350* for 5 hours then drop the temerature to 300* for one more hour. Whe the pork is done cooking let it sit in the pan for about 15 more minutes. (Stand guard though, by your pork, as guests will wander by with plucky fingers trying to distract you as they grab a piece and run.)

   The Juice: (Optional)

   One bunch of chopped oregano. (If you don't have fresh, a few shakes will do.)

   The juice of 2 limes.

   Salt & pepper (A few shakes.)

   1/3 cup of olive oil.

   The Mix:

   Throw all ingredients in a bowl and mix. Pour over pork. Serve on a platter in its own drippings combined with the lime sauce.
