Easy Pizza Sauce

   Heat the olive oil in a medium saucepan over medium heat.

   Add the onion and carrot and cook, until softened, about 8 minutes, stir occasionally.

   Add the tomatoes with juice, italian seasoning, salt and black pepper.

   Turn up the heat and bring to a boil.

   Once it boils turn the heat to low and simmer for 2 hours.

   Carefully puree with an immersion blender or in your blender until very smooth.

   Let it cool before putting on pizza.

   This can be refrigerated for up to a week.
