Easy Oil and Sugar-free Banana Cake Made with the Microwave

   Mix the eggs and peeled bananas in a blender.

   Put the blended mixture in a bowl, and sift in the pancake mix.

   Fold it in with a spatula.

   Pour the mixture into a mould until about 80% full.

   Cover it loosely with plastic wrap, leaving a gap between the mixture and plastic, and microwave on high for 1 minute.

   Instead of pancake mix, you can use 150 g of cake flour and 1 1/2 teaspoons of baking powder.
