In a large bowl, combine flour, yeast, sugar and salt. Make a well in centre. Gradually add water, stirring to form a soft dough (you may need an extra 50ml water to do this).

Turn onto a floured surface; knead 10 minutes, until smooth and elastic. Place in a lightly oiled bowl; set aside, covered with a clean tea towel, until doubled in size (about 1 hour).

Preheat oven to moderate, 180u00b0C./ 160u00b0C. fan. Gas mark 4. Lightly grease 2 oven trays.

Punch down dough with fist; knead 2-3 minutes, then divide into 6 pieces. Roll out on lightly floured surface into 15cm rounds.

Top with filling of choice. Brush edges with water; fold dough over and press to seal. Set aside 15 minutes, to rise slightly.

Bake 20-25 minutes, until calzone are golden. Serve with salad, if liked.
