Preheat the oven to 410F/210C.

Make the apple filling.

First, dice the apple into 5 mm.

Put the apple, sugar and butter in a pan, and saute.

When the butter and sugar have melted and everything is well mixed, simmer over medium-low heat until there's no liquid left in the pan, stirring occasionally.

When the liquid is gone and the apple is translucent, slightly golden brown and shiny, it's done.

Leave to cool down completely.

Take the 2 sheets of frozen pastry out of the freezer, and leave for 5-10 minutes at room temperature.

Cut each sheet into quarters.

Take 2 of the quarter pieces and cut 4 slits as shown.

Poke several holes in the other 2 pieces with a fork.

If you have a pastry sheet that already has holes in it you can omit this step.

Cut and poke the other pastry sheet in the same way.

You'll have 4 pieces with slits and 4 pieces with holes.

Put a generous mound of apple filling on the 4 pieces without the slits, leaving about a 5 mm gap around the edges.

Top with the pastry pieces with the slits, and crimp the edges with a fork.

Line a baking pan with parchment paper, place the pies on top, brush the tops with egg yolk, and bake for 10 minutes in a 410F/210C oven.

Lower the temperature to 360F/180C after 10 minutes, bake for a further 15 minutes and serve!
