In a bowl, mix the flour, vanilla extract, whole egg, 2/3 cup powdered sugar, and a pinch of salt. Add the butter and knead to a smooth dough. Wrap in aluminum foil and chill for 30 mins.

Preheat the oven to 325u00b0F. Line 3 baking sheets with parchment paper. On a lightly floured surface, roll out to 1/8 of an inch thick. Cut out 30 assorted, rabbits, lambs, ducks and butterflies, re-rolling the dough as necessary. Lay on the baking sheets.

Mix the egg yolk and half and half and brush over the cookies. Bake one sheet at a time for 10-14 mins each, until golden brown. Allow to cool.

Mix the egg white, lemon juice and remaining powdered sugar to a smooth, thick icing. Divide evenly into 4 bowls. Leave 1 bowl white and color the others red, yellow and blue. Remove 1 tbsp of each icing and place in small freezer bags. Cut off a small corner of each.

Frost the cookies with the different icings. Allow to dry, then decorate with the bagged icings and colored sprinkles.
