1/4 cup unsalted butter
2 Empire apples, peeled, cored and cut into 1/4-inch dice
1/4 cup red wine vinegar
10 to 15 pink peppercorns
Potato Goulash, recipe follows
1 tablespoon extra-virgin olive oil
1 large onion, sliced into 1/4-inch rings
2 pounds small waxy potatoes, cut into quarters
2 tablespoons paprika
Salt and pepper
1 tablespoon tomato paste

In a large, heavy-bottomed skillet, heat the butter over high heat until it foams and subsides.
