A wire rack to elevate the steak is absolutely essential for this recipe.

It will allow air flow to circulate around the meat.

The first thing is to pat the steaks and dry as possible.

Place the wire rack on top of a baking pan.

Then wrapped in a single layer of paper towels and place on the wire rack.

Then place the coldest part of your refrigerator (usually the bottom) and leave for 24 hours.

After 24 hours remove the paper towels and wrap with fresh paper towels (a single layer).

Return to the refrigerator and let dry for 2 or 3 days (3 days would be better).

If you wish to add a dry rub or seasoning before cooking you want to add an extra generous amount and let season for 24 hours with a paper towel draped over the entire pan.

Because of the dryness of the steak the absorption of seasonings will be much slower then a fresh bought steak.

A marinade will work fine on the steaks as well.
