To make dough, combine flour, sugar and salt. Cut in butter. Cut in egg yolk and vanilla until blended. Add as much water as necessary for dough to come together. Wrap in plastic wrap and chill at least 1 hr.

To make cobbler, combine peaches, all but 1 t. white sugar, brown sugar, cornstarch, lemon juice, nutmeg, and cinnamon. Toss. Pour into 2 qt. baking dish. Dot with butter.

Roll out cobbler dough and tear into 3-inch (or so) pieces. Lay dough strips over top of cobbler. Sprinkle with final 1 t sugar.

Bake at 425F for 10 minutes. Reduce heat to 350F and bake about 50 minutes more, until topping is lightly golden and filling is bubbling.
