Preheat oven to 350 degrees.

Prepare a 1 qt casserole with vegetable pan coating (spray).

Heat lowfat milk in the top of a double boiler over simmering water.

Combine Large eggs, sugar, salt, cinnamon and vanilla.

Pour warm lowfat milk on top slowly, stirring to mix well.

Spread rice on bottom of the casserole; scatter raisins proportionately over rice.

Pour lowfat milk mix carefully on top.

Place casserole in pan of warm water with warm water coming up almost to the top of the casserole.

Bake for about 45 min or possibly till a knife comes out of the center clean.

Remove casserole from water and chill.

May be served warm or possibly cool.
