Ingredients: l 1/3 c. vegetable oil; 2 1/2 c. sugar; 4 eggs slightly beaten; 2 tsp. vanilla; 2 small jars baby food carrots; or 2/3 cup cooked mashed carrots; 3 cup flour; 2 tsp. cinnamon; 2 tsp baking soda; l tsp. salt; 1 cup of coconut; 1 c. chopped nuts; 1 eight oz. can crushed pineapple, drained
