   Take the meat out of the refrigerator and let it sit about 30 minutes to 1 hour to bring it to room temperature.

   If the meat is exposed to light, the color will change, so cover with some paper (such as newspaper).

   When storing in the refrigerator, do the same.

   Without putting any oil in the pan, warm the frying pan on a medium heat and set the fat of the meat on the pan.
