150 grams Cabbage
1/2 bunch Chinese chives
1/2 Japanese leek
1 to 2 cloves Minced garlic
1 same amount as the garlic Minced ginger
2 tbsp Sake (or Shaoxing wine)
1 tbsp Sesame oil
1 tsp Soy sauce
1 tsp Chicken soup stock
1/2 tsp Sugar
1 Salt and pepper
20 large gyoza skins

Mix thoroughly Wrap in the skins (makes about 20 large).
