1. Cut a straight line across the top of each strawberry (removing stem), so berries stand upright. Place strawberries cut side down and make a criss cross cut on the bottom of each strawberry. Cut no more than 3/4 of the way down, making sure you do not cut all the way through. Gently fan out wedges.

2. In a medium-sized bowl, mix together cream cheese, powdered sugar and vanilla extract, until creamy and smooth. Fill mixture into a pastry bag or Ziploc bag. Cut a small slit on one end of the bag.

3. Gently fill each strawberry with the cream cheese mixture. Sprinkle crushed Nilla wafer cookies on top.

4. Microwave chocolate chips in a small bowl for about 1 minute, or until melted. Stir melted chocolate with a fork and drizzle over the top of the strawberries. You can drizzle as much or as little of the chocolate as you'd like.

5. Refrigerate until ready to serve, and enjoy!
