Pre heat oven to 375 F

1) In a food processor add flour and salt and pulse 2 or 3 times. Then add butter and pulse until butter incorporates and becomes pea size. Now add water in 3 batches and pulse until dough starts to form.

2) Take the dough out of the machine and roll into a disk. Place on a plate and put it in the fridge for 30 minutes.

3) Take the dough out of fridge and roll out into a 11 inch circle about 1/8-1/4 inch in thickness. Form the dough in pie dish and poke holes with a fork. Put a piece of parchment paper on top of the pie crust and add pie weights.

4) Blind bake in the oven for about 15-20 minutes until the crust starts to turn from golden brown to a deeper color brown. Then remove crust and set aside.

5) Add dates, brown sugar, butter, rum and salt in a heavy bottom pan and bring to a boil over medium heat stirring often. When the mixture comes to a boil lower heat and simmer for 10 minutes until the dates melt almost completely. Set aside and cool.

6) Pour date filling into pie crust and set into the fridge until set about 2 hours

7) Take whipping cream, pour into a bowl and add softened goats cheese. Using hand mixer or stand mixer whip until cream forms about 5 minutes.

8) To assemble pie, smooth whipped cream over pie covering the filling completely. Sprinkle crumbled bacon over whipped cream, cut and serve.
