3. In a large bowl beat eggs and sugar together using a mixer on a medium speed for about a minute.

4. Slowly add oil while the mixer is on.

5. Add shredded zucchini and vanilla extract, keep mixing.

6. Turn the mixer to low and slowly add the dry mixture.

7. Add the melted chocolate and mix until all the ingredients are combined.

8. Divide the batter between the muffin cups and bake for 30-35 minutes. *Please note that I used a large muffin pan! Check your muffins after 20 minutes, if you are using a regular muffin pan.
