To make the ice cream base, blend the coconut milk, bananas, honey, vanilla, and lime juice in a blender till smooth.

Pour the mixture into your ice cream maker (I recommend the old school rock salt and ice kind).

Follow the instructions on your ice cream maker.

It will take about 30 minutes to get thick, then change the salt/ice ratio as per the ice cream makers instructions, cover with a towel and let it sit (not turning) for another 30 minutes to an hour.

If you dont have an ice cream maker, pour the mixture into a freezer container.

Every 20 minutes, remove from the freezer.

Using electric beaters, beat the mixture to break up the ice crystals and place back in the freezer.

Do this as many times as you need, till desired consistency is achieved.
