¾ teaspoon salt

1 tablespoon vegetable oil
½ cup onion, chopped
1 (13 1/2 ounce) can coconut milk
2 tablespoons tomato paste
3 cups fresh spinach
1 cup tomatoes, chopped

Mix together curry, salt & pepper- Sprinkle over chicken.

In a large skillet, saute the onion and chicken until no longer pink, about 8 minutes.

Stir in coconut milk and tomato paste.

Bring to a boil.

Reduce heat and simmer uncovered for 5 minutes.
