2 (15 ounce) cans low-sodium low-fat chicken broth
¾ cup apple juice or ¾ cup apple cider
1 small cinnamon stick (1 inch)
1 bay leaf
2 tablespoons soy sauce
2 medium sweet potatoes, peeled and finely diced

In a small bowl, soak raisins in beer.

Drain beer into skillet, stirring continuously, then cook 5 minutes.

Add chicken stock, apple cider, cinnamon stick, bay leaf and soy sauce.

Bring to a boil, then add diced sweet potato.

Cook 30 minutes, or until sweet potato is tender.

Remove and discard cinnamon stick and bay leaf.
