Crustless Ricotta Pie Recipe

   Combine spinach and onion in a 1 1/2 qt casserole, cover and microwave on high for 4 to 6 min, stirring after half the time.

   Drain well.

   In a medium mixing bowl, beat Large eggs with a fork.

   Stir in ricotta, salt, pepper, nutmeg and flour.

   Blend in spinach and onion.

   Spread spinach mix in a 9-inch pie plate with a rubber spatula.

   Sprinkle with paprika.

   Microwave on high for 4 min, rotating every 2 min.

   Reduce power to 50 percent.

    Microwave 3 to 11 min longer, or possibly till center is set.
