preheat oven to 180degrees gas mark 4, line 2 baking trays sift flour mustard cayene and a good pinch salt.

rub in butter and then stir in cheeses, add egg yolk abd 2 teaspoons cold water stir until the mixture forms clumps, mix with hands and shape into slab about 2cm thick and wrap in clingfilm and chill for 30 minutes

roll out a third of dough between two sheets of cling film 2 cm thick ( you wont need to use flour each time which keeps biscuits crisp).

remove top sheet and cut dough into stars or circles with cutter.

put on baking tray and repeat with rest of dough.

lightly beat egg whiteand bruch on star biscuits, sprinkle with poppy/ sesame or both or leave plain.

bake for 12-14 mins leave to cool on wire rack.

pack into decorative box with papper and ribbon as x mas pressie or store in airtight container.
