first let me say I have a large family so i use a large crockpot/ roaster this recipe will not work for a regular sized crockpot unless you possibly half all the ingredients.

set your crockpot to 275 fill with about two to three inches of water place your pork loin in the direct center of the crockpot add your vegetables mixed all around the pork loin.

mix all of the spices into a bowl sprinkle 1/2 of the spices on top of the pork loin and pat in place.

add the rest of the spices into the vegetables.

take your stick of butter cut into teaspoons and arrange them on top of the vegetables.

place the lid on top with any vents closed.

every few hours stir the vegetables and drizzle a little juice on top of the roast.

not a lot you don't want your spices to be rinsed off.

at around the seventh or eighth hour take your meat thermometer and see if the temperature has reached 158 when it has the meat is done.

but I cook mine for another hour after that.

the average cook time for a four pound roast is eight to ten hours.

I recommend cooking for 9 to 10 hours the meat just falls apart.

if cooked for the full time the vegetables will be extremely soft.

for a little firmer veggies add them about three hours after starting to roast cooking.

but follow the rest of the directions.

if you don't have a large crock pot you can always use a very large stew pot same effect just but on low heat and simmer and add a few cups more of water
