Ingredients: 2 teaspoons vegetable oil; 3 medium onions, chopped; 8 garlic cloves, minced; 1 ½ cups barbecue sauce; 4 cups small dried white beans, picked over, rinsed and soaked overnight (2 pounds); 8 slices bacon, chopped fine; ½ cup packed dark brown sugar; 6 cups boiling water; 1 tablespoon spicy brown mustard; ½ cup strong black coffee (optional); salt; pepper

3 medium onions, chopped
8 garlic cloves, minced
1 ½ cups barbecue sauce
4 cups small dried white beans, picked over, rinsed and soaked overnight (2 pounds)
8 slices bacon, chopped fine
½ cup packed dark brown sugar
6 cups boiling water
1 tablespoon spicy brown mustard
½ cup strong black coffee (optional)
salt

Night before prepare the beans and soak overnight.

Heat oil in skillet over medium heat until shimmering.

Add the onions and 1/4 teaspoon salt and saute until opaque.

Stir in garlic and continue cooking for another 15 seconds.

Stir in 1 cup of barbecue sauce.

Bring to a simmer; pour into the slow cooker.

Drain the beans and add to the slow cooker.

Add bacon and brown sugar and then the boiling water.

Cover and cook on low for 9-10 hours, or high for 6-7 hours, until the beans are soft.

Thirty minutes before serving, stir in the mustard, coffee and remaining 1/4 cup barbecue sauce, and adjust the salt and pepper as needed.
