Trim the artichokes by removing the stems, the hard outer leaves and thorns. Cut them spicchietti, eliminating the central hay and put them in water acidulated with lemon juice. Peel and chop the onion and saute in the butter, then add the artichokes and fry well flavor. Moisten with a glass of hot broth, season with salt and pepper and cook for about 40 minutes, adding more broth if necessary. Then move everything to the blender and add 2 egg yolks Parmesan cheese and bread crumbs. Mix well and let stand for 20 minuti.Formate oval croquettes, roll in flour, then in the remaining 2 eggs, beaten with a little salt and bread crumbs. Fry in hot oil and serve immediately while still hot and crispy.
