For the sweet and sour sauce, mix together the sugar, vinegar and 5 tbsp water. Add the Sambal Oelek to taste. Heat the olive oil in a small saucepan and saute the garlic and ginger for 1-2 mins over low heat. Add the vinegar mixture to the pan along with the peppers. Simmer for 2 mins. Set aside to cool.

Meanwhile, for the batter, mix the egg, flour and rice wine until smooth. Set aside for 5 mins. Cook the cauliflower in salted, boiling water for 3 mins. Drain.

Heat the oil in a deep saucepan. Dip 1/3 of the cauliflower in the batter, sprinkle with 1/3 of the sesame seeds and deep-fry for 3 mins, until crispy. Drain on paper towels. Repeat with the remaining cauliflower and sesame seeds until all the ingredients are used. Serve with the sweet and sour sauce.
