Creamy Spinach With Feta

   Lightly grease a shallow 2-qt.

   casserole.

   preheat oven to 325F.

   Cook spinach according to package directions.Drain and press out all the water and set aside.

   Melt 1 tablespoon of the butter in a pan and cook mushrooms till lightly brown.

   6-8 minutes stir often.set aside.

   In a medium saucepan melt the remaining 2 tablespoon butter, stir in flour cook stiring for 1 min.,add milk salt and nutmeg stirring over medium heat approximately 5-6 minutes till thickened.

   combine spinach, mushrooms and sauce in the prepared casserole.Top with feta cheese and bake uncovered for 25-30 minutes.
