Ingredients: 1 kg Washed potatoes, thinly sliced; 3 Rashers bacon, chopped; 1/2 large Green capsicum (pepper), diced; 300 ml Sour cream; 1/3 cup Chives, chopped; 1/3 cup Flat leaf parsley, chopped; 1 cup Grated cheese; 1/2 cup Grated Parmesan cheese; 1 Sea salt & cracked black pepper; 1 Sprinkle of smoked paprika

Servings: persons

1 kg Washed potatoes, thinly sliced
3 Rashers bacon, chopped
1/2 large Green capsicum (pepper), diced
300 ml Sour cream
1/3 cup Chives, chopped
1/3 cup Flat leaf parsley, chopped
1 cup Grated cheese
1/2 cup Grated Parmesan cheese
1 Sea salt & cracked black pepper
1 Sprinkle of smoked paprika

Pre heat oven to 180*C.

Now- prep your veggies separately.

Slice potatoes, dice bacon & pepper, grate cheeses, chop herbs.

Layer ingredients into a baking/ casserole dish.

Potatoes, bacon, peppers, herbs, cheese and then drizzle a little cream.

Repeat process until you are happy with size of the dish, finishing with a layer of potato.

Cover and bake for 30 minutes.

Remove from oven, uncover and top with extra cheese, paprika and salt & pepper.

Return to the oven and bake until potato is soft and creamy and topping is golden brown.
