Creamy Herb and Pumpkin Soup

   Melt the butter in a large saucepan, add onion and saute 3-5 minutes.

   Add the pumpkin and stock.

   Bring to the boil and simmer for 20 minutes or until pumpkin is tender.

   Puree the soup in a food processor or blender, return to a clean saucepan and add the milk.

   Season to taste.

   Heat again before serving but do not boil.

   Serve soup in a large bowl with a dollop of Philly*.
