To make the tart dough, combine butter, flour, 1 egg, 1 egg yolk, 1 tbsp creme fraiche and a pinch of salt in a food processor. Process until combined then transfer to a floured work surface and knead into a ball. Wrap in plastic wrap and chill for 30 mins.

Preheat oven to 400u00b0F. Grease and flour 8 - 5 inch tart pans.

On a floured work surface, roll out dough to 1/8 inch thick. Cut out 8 - 5 1/2 inch discs and use to line tart pans. Trim excess dough then prick bottoms with a fork. Bake for 10 mins, until golden brown.

Meanwhile, whisk together creme fraiche, cornstarch, paprika, 1 egg yolk and 2 eggs. Season and add white pepper and nutmeg. Add 3/4 of the grated cheese. Distribute between tart shells and sprinkle with remaining cheese. Bake for 20 mins. Let cool in pans for 5 mins then transfer to serving plates and garnish with chopped chives. Serve.
