2 egg yolks
1 cup milk
½ cup chicken broth
½ cup cream
3 tablespoons butter

3 ounces mushrooms
3 tablespoons sherry wine

saute' onions, celery in 3 tbs butter, set aside.

Melt 8 tbs butter, stir in flour until smooth.

slowly add to roux, stirring constantly.
